Window jamb proud of new drywall

I'd prefer to keep the new trim as minimal as possible so I don't end up with a window inside my shower. 1) Pull the quarter round out and then cut the jamb back with a multitool and hand planer to be flush with the new wall. (how will I ensure that the seam between the trim and added wood isn't visible?)
